Cinnamon Roasted Almonds

1 Egg White
1 Tsp Water
1/2 Tsp Cinnamon
1/3 Cup Sugar
3 Cups Raw Almonds

In a mixing bowl, whisk the egg white and water together until bubbly. Preheat oven to 250° F.

Add almonds and mix well until almonds are wet evenly.

Add Cinnamon and Sugar to coat almonds.

Place almonds on a oven rack and place in oven. Bake for an hour while occasionally stirring the almonds.

The next time I make these, I would consider putting more sugar. 1/2 cups to 2/3 cups next time. I would put more cinnamon in next time also, I think. BUT less sugar, less calories. Win some, lose some/gain weight.

The baking process leaves your kitchen warm with a nice nutty-cinnamon smell. Best baked while listening to Holiday Music.

Drink with Soy Milk for a nice study snack!
